Winter's Here: Make Some Soup

Winter’s arrived, and nothings better than a great hot soup to warm you up on a cold night. Soups are great on your budget, super healthy and easy to make. Here’s the recipe for a spicy Moroccan Vegetable Soup.

Ingredients

2 tbl sp Olive Oil

2 tea sp Chilli Flakes

2 tea sp Minced Ginger

2 tea sp Minced Garlic

1 tea sp Cinnamon

1 can of Chick Peas, drained

1 cup of red lentils

2 grated carrots

¼ butternut pumpkin, grated

2 onions, chopped finely

1 litre vegetable stock

500 mls of water

1 sml tub of natural yogurt

 

Method

In a large saucepan add a tablespoon of olive oil. Add the garlic, ginger, and cinnamon. Throw in the onions and stir until softened. Add the grated vegetables, the stock and the water, then throw in the lentils and chick peas. Bring to the boil and then leave to simmer for around an hour, or until the lentils and soft and mushy,

Let the soup cool and then place in a blender and blend into a puree. Reheat each batch as you need it. Drop a dollop of yogurt and a dash of olive oil into the middle of each bowl. Sprinkle some chilli flakes on top for extra heat.
